Coconut sugar is a natural, unrefined sweetener derived not from the coconut fruit itself, but from the nutrient-rich sap of the coconut palm flower blossom. It’s highly valued in the modern food market as a healthier, sustainable alternative to traditional cane sugar.
How its produced?
Skilled local farmers sustainably "tap" the unopened flower buds of the coconut palm. The sweet, nectar-like sap (or "tuba") is collected fresh daily. Then the collected sap is gently heated in large woks until most of the water content evaporates. This process is crucial, it caramelizes the liquid into a thick, syrupy consistency. The syrup is cooled while being continuously stirred until it solidifies and breaks down into small, crystalline granules. The resulting sugar is sifted to ensure a uniform texture and packed immediately to maintain freshness and prevent moisture absorption.
